Ume Miso


Yamaki Jozo blends sun-dried ume (Japanese plums) with their brown rice miso and brown sugar to make this beautiful miso. It has such a delightful combination of sweet, sour and salty flavors, with a floral aroma and lovely miso notes. Use in a dipping sauce or marinade and brushed on grilled chicken or vegetable dishes. It is also delicious as a spread. Yamaki Jozo suggests using like a jam and spreading a thin layer on bread to make a nice plum-flavored "miso bread".

Ingredients: rice miso (soybean, rice, salt), ume (Japanese plum), sugar (contains soy)

About the producer: Founded in 1902 in Saitama Prefecture outside of Tokyo, Yamaki Jozo produces their traditionally brewed soy sauce and miso using Japan-grown whole soy beans, wheat, salt and water from a spring at the top of a local mountain.
